granola, my better half

i eat granola like it's my job. -- no. really.  i love it like it's part of my family. -- no. really. like a close sibling. it completes me. it's my better half. i love it to the moon and back.

so, i thought i would share one of thee easiest recipes to date for granola. the result is a super great mix for yogurt or as cereal.
6-7 cups of rolled oat.
3/4 C. Canola Oil
3/4 C. Honey
1 teaspoon vanilla
1 teaspoon cinnamon
3/4 C. almonds, other nuts, dried fruit

mix oats and oil. stir in honey. add vanilla, cinnamon and other optionals (leave out dried fruit). spray 9x13 (or larger) pan. spread evenly in pan. bake for one hour on 300, stirring every 10 minutes. when done (60 minutes or when it starts to turn the brown you like). take out of oven and leave in pan to cool. add dried fruit upon cooling. store in air tight container. eat until gone.
i usually make 2 batches at the same time...(let's be efficient, now)...and the above 2 containers shows the result of 2 batches. if you do make 2 batches...put each batch in it's own pan to bake...and every time you take out to stir, alternate the location.
